Name This Nepali Dish!!

Hi everyone,

I'm a food writer and fan of Nepali food (momo are my life).

Question: I had a Nepali dish once, and it was mostly just an assortment of organ meat. It was called something like "Kitikat" or something like that. But it doesn't google. Can anyone help?

Thanks, but, no, that's not it. Nothing raw....just an assortment of different meats, heavy on the organs. And it was, I'm pretty sure, three syllables beginning with a "K". Katikat? Kitikat? Kakikak?

Also, I'm working on a book about world cuisines, and I need to provide pronunciation help for dishes like Dhido (some spell it Dhindo), Gundruk Ko Tarkari, and Sekuwa. Do you know if there's anywhere on the web that provides this sort of pronunciation help, or recordings of native speakers speaking these phrases?

Not enough American food writers are paying attention to Nepali food, and I want to help change that.....especially since there are so many Nepali immigrants coming here and cooking so great.....

Also not choila (which I don't think is usually organ meat....either water buffalo or chicken or mutton, no? And all one cut of meat in a choila, while the one I'm talking about was an assortment.

I remember it included kidneys. But all really simple...no sauce or much seasoning. Just meat.

Is it Bhitryaas ? -- it includes kidney, liver, intestines etc...

Anand, not Bhitryaas, and not a stew (the photo looks GREAT, by the way!). Just a plain platter of various organ meats.

Another question! Do Nepalis call vegetable momo "tsel momo", or is that just the Tibetan term?

Also, in the book I'm working on, I want to help readers pronounce Nepali dishes. Can you tell me if these pronounciations are correct? In exchange for your help, I'll be very glad to credit you in the book!

Sel Roti  - Sel ROH-tee
Dal bhat  - Dahl baht
Dhido  - DEE-dough
Sukuti  - Soo-KOO-tee
Phaparko Roti  - Pah-PAR-koh ROH-tee
Choila -- CHOY-lah
Bhakcha Markhu  - BAHK-chah MARK-oo
Aloo ko Achaar (Potato/Radish)  - AH-loo koh ah-CHAR
Raayo Saag --  RAH-yo sahg
Aloo Tama  - AH-loo TAH-mah
Aloo Kauli Ko Tarkari -- AH-loo KOW-lee tar-KAR-ee
Gundruk Ko Tarkari -- GOON-druhk ko tar-KAR-ee
Chatamari  - Chah-tah-MAR-ee
Ema Datshi  - EL-mah DAHT-shee

They do pronounce good

Bhat --- is more like "ta" than 'T'

Choila -- CHOY-lah
(it's not CHO --- it is CHHO)

In Aloo Kauli Ko Tarkari
Kauli pronounces like "Kaau-lee"
